Zucchini Bread
The answer to every zucchini that escaped your notice and became enormous. Moist, lightly spiced, and keeps well. Makes great use of oversized summer squash.
Ingredients

- zucchini (2 cups grated)
- eggs (2)
🛒 From the Store
- flour
- sugar
- oil
- cinnamon
- baking soda
- salt
- walnuts optional
How to Make It
- Gather your ingredients: zucchini (2 cups grated), eggs (2), flour, sugar, oil, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: zucchini (2 cups grated), eggs (2).
- No need to peel — the peel disappears into the bread and adds color. Grate coarsely on a box grater, not fine.
- Cook for approximately 1 hr 10 min. Adjust to taste and serve 8 portions.
- Plate, enjoy, and share with your household!
