Tomato Herb Savory Muffins
Savory muffins packed with roasted cherry tomatoes and fresh herbs. More interesting than a dinner roll, great for lunchboxes, and a natural home for that late-summer tomato surplus.

- fresh basil and thyme (2 tbsp each)
- eggs (2)

- flour
- baking powder
- parmesan
- olive oil
- milk
- salt
- pepper
How to Make It
- Gather your ingredients: cherry tomatoes (1 cup halved), fresh basil and thyme (2 tbsp each), eggs (2), flour, baking powder, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: cherry tomatoes (1 cup halved), fresh basil and thyme (2 tbsp each), eggs (2).
- Roast the cherry tomatoes for 20 minutes before adding them to the batter — it intensifies their flavor and drives off excess moisture that would otherwise make the muffins dense.
- Cook for approximately 35 min. Adjust to taste and serve 12 portions.
