Apple Cinnamon Harvest Muffins
Tender muffins loaded with diced apples, cinnamon, and a crunchy brown sugar topping that shatters when you bite through it. Bake a batch on Sunday and breakfast is handled until Wednesday.
Ingredients

- apples (2 medium, peeled and diced)
- eggs (2)
- raw honey (2 tbsp, optional partial swap)

- flour (2 cups)
- sugar (3/4 cup)
- buttermilk (3/4 cup)
- oil (1/3 cup)
- baking powder (2 tsp)
- cinnamon (1.5 tsp)
- vanilla
- brown sugar and butter (for topping)
- salt
How to Make It
- Gather your ingredients: apples (2 medium, peeled and diced), eggs (2), raw honey (2 tbsp, optional partial swap), flour (2 cups), sugar (3/4 cup), and the rest.
- Prep your homestead ingredients — wash, chop, and measure: apples (2 medium, peeled and diced), eggs (2), raw honey (2 tbsp, optional partial swap).
- Fill each muffin cup 3/4 full — not heaping, not barely. Overfilled muffins bake into each other and stick; underfilled ones are flat on top. 3/4 full is the measure for a proper domed top.
- Cook for approximately 35 min. Adjust to taste and serve 12 portions.
- Plate, enjoy, and share with your household!
