Tender muffins loaded with diced apples, cinnamon, and a crunchy brown sugar topping that shatters when you bite through it. Bake a batch on Sunday and breakfast is handled until Wednesday.

Ingredients

🌱 From Your Homestead

  • apples (2 medium, peeled and diced)
  • eggs (2)
  • raw honey (2 tbsp, optional partial swap)

🛒 From the Store

  • flour (2 cups)
  • sugar (3/4 cup)
  • buttermilk (3/4 cup)
  • oil (1/3 cup)
  • baking powder (2 tsp)
  • cinnamon (1.5 tsp)
  • vanilla
  • brown sugar and butter (for topping)
  • salt

How to Make It

  1. Gather your ingredients: apples (2 medium, peeled and diced), eggs (2), raw honey (2 tbsp, optional partial swap), flour (2 cups), sugar (3/4 cup), and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: apples (2 medium, peeled and diced), eggs (2), raw honey (2 tbsp, optional partial swap).
  3. Fill each muffin cup 3/4 full — not heaping, not barely. Overfilled muffins bake into each other and stick; underfilled ones are flat on top. 3/4 full is the measure for a proper domed top.
  4. Cook for approximately 35 min. Adjust to taste and serve 12 portions.
  5. Plate, enjoy, and share with your household!
