- Gather your ingredients: ripe tomatoes (3-4 medium), fresh thyme or basil, pie dough or puff pastry, ricotta or gruyère, olive oil, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: ripe tomatoes (3-4 medium), fresh thyme or basil.
- Slice tomatoes, salt them, and drain on paper towels for 20 minutes. Wet tomatoes make soggy pastry — this step matters.
- Cook for approximately 50 min. Adjust to taste and serve 4 portions.
