Flaky, buttery scones loaded with sharp cheddar and whatever fresh herbs are on the counter. The scone that surprises people who think of scones as sweet. Goes with soup, eggs, charcuterie — essentially everything.

  • baking powder (1 tbsp)
  • salt
  • black pepper
  • mustard powder (1/4 tsp)

How to Make It

  1. Gather your ingredients: fresh chives, rosemary, or thyme (3 tbsp finely chopped), eggs (1, for egg wash), flour (2 cups), cold butter (6 tbsp, cubed), sharp cheddar (1 cup grated), and the rest.

  3. Keep everything cold — the butter, the buttermilk, the bowl. Warm butter melts before the oven and you lose the flaky layers. Work fast and if the dough feels warm at any point, put it in the fridge for 10 minutes.
  4. Cook for approximately 40 min. Adjust to taste and serve 8 portions.
  5. Plate, enjoy, and share with your household!
