Garden Herb Focaccia
A thick, airy flatbread dimpled with fresh herbs and finished with good olive oil and flaky salt. One of the more forgiving baking projects — the dough practically makes itself if you give it time.
Ingredients

- bread flour
- active dry yeast
- olive oil (generous)
- flaky salt
- sugar
- water
How to Make It
- Gather your ingredients: fresh rosemary and thyme (generous handfuls), garlic (optional slices on top), bread flour, active dry yeast, olive oil (generous), and the rest.
- Prep your homestead ingredients — wash, chop, and measure: fresh rosemary and thyme (generous handfuls), garlic (optional slices on top).
- The more olive oil in the pan the better — it should pool in the dimples. Focaccia needs to fry on the bottom in the oven. That's the whole technique; don't be shy with it.
- Cook for approximately 2 hr 30 min. Adjust to taste and serve 12 portions.
- Plate, enjoy, and share with your household!
