A thick, airy flatbread dimpled with fresh herbs and finished with good olive oil and flaky salt. One of the more forgiving baking projects — the dough practically makes itself if you give it time.

Ingredients

🌱 From Your Homestead

  • fresh rosemary and thyme (generous handfuls)
  • garlic (optional slices on top)

🛒 From the Store

  • bread flour
  • active dry yeast
  • olive oil (generous)
  • flaky salt
  • sugar
  • water

How to Make It

  1. Gather your ingredients: fresh rosemary and thyme (generous handfuls), garlic (optional slices on top), bread flour, active dry yeast, olive oil (generous), and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: fresh rosemary and thyme (generous handfuls), garlic (optional slices on top).
  3. The more olive oil in the pan the better — it should pool in the dimples. Focaccia needs to fry on the bottom in the oven. That's the whole technique; don't be shy with it.
  4. Cook for approximately 2 hr 30 min. Adjust to taste and serve 12 portions.
  5. Plate, enjoy, and share with your household!
