Slow-oven-dried tomatoes blended into a thick, intensely flavored spread. Concentrate the entire tomato harvest into a jar. On bread, pasta, or just a spoon — it's summer in a jar.

Ingredients

🌱 From Your Homestead

  • Roma or paste tomatoes (2 lbs)
  • fresh basil and thyme

🛒 From the Store

  • olive oil
  • garlic
  • salt
  • red pepper flakes optional

How to Make It

  1. Gather your ingredients: Roma or paste tomatoes (2 lbs), fresh basil and thyme, olive oil, garlic, salt, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: Roma or paste tomatoes (2 lbs), fresh basil and thyme.
  3. Halve tomatoes and roast cut-side up at 225°F for 3 hours until wrinkled and reduced but still slightly moist. All the way dry is jerky; slightly moist is spreadable. Pull them when they look like the sun-dried kind from the store.
  4. Cook for approximately 3 hr 15 min. Adjust to taste and serve 12 portions.
  5. Plate, enjoy, and share with your household!
