Quick Pickled Red Onions
Thinly sliced onions pickled in a simple brine that are ready in 30 minutes and transform every sandwich, salad, or taco they touch. One of the easiest things you can do to make your food better.
Ingredients

- red onions (2 medium)
🛒 From the Store
- apple cider vinegar
- water
- sugar
- salt
- peppercorns
- bay leaf optional
How to Make It
- Gather your ingredients: red onions (2 medium), apple cider vinegar, water, sugar, salt, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: red onions (2 medium).
- Slice as thin as possible — a mandoline if you have one. Thin slices absorb the brine quickly and get tender; thick slices stay sharp and crunchy for days (also fine, just different).
- Cook for approximately 10 min + 30 min rest. Adjust to taste and serve 8 portions.
- Plate, enjoy, and share with your household!
