How to Make It

  1. Gather your ingredients: roasted sugar pumpkin or winter squash (1 cup purée), eggs (2), honey (2 tbsp optional), flour, sugar, and the rest.

  3. Roast pumpkin halves cut-side down at 375°F until a fork goes through with no resistance (about 45 min), then scoop and purée. Roasting instead of boiling keeps it from getting watery.
