Corn & Black Bean Quesadillas
Fresh corn cut off the cob gives these quesadillas a sweetness and bite that frozen corn just cannot replicate. A fast weeknight dinner that disappears fast.

- black beans
- shredded cheese
- oil
- sour cream for serving

How to Make It
- Gather your ingredients: sweet corn (2 ears), jalapeño (1), fresh cilantro, flour tortillas, black beans, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: sweet corn (2 ears), jalapeño (1), fresh cilantro.
- Cook quesadillas in a dry skillet — no oil needed if you have a good pan. Oil makes them greasy; a dry hot skillet gets the exterior perfectly crisp.
- Cook for approximately 20 min. Adjust to taste and serve 4 portions.
