Zucchini Noodle Bowl
Spiralized zucchini with a bright lemon herb dressing and whatever toppings you have. No cooking, just slicing — perfect for the hottest days of summer when turning on the stove sounds terrible.

- zucchini (2 medium)
- cherry tomatoes
- fresh basil and parsley
- garlic

- lemon
- olive oil
- parmesan
- pine nuts or walnuts
- salt
- pepper
How to Make It
- Gather your ingredients: zucchini (2 medium), cherry tomatoes, fresh basil and parsley, garlic, lemon, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: zucchini (2 medium), cherry tomatoes, fresh basil and parsley.
- Salt the zucchini noodles and let them drain for 10 minutes before dressing — removes extra water and keeps the bowl from going watery by the time it reaches the table.
- Cook for approximately 15 min. Adjust to taste and serve 2 portions.
- Plate, enjoy, and share with your household!
