Crispy pan-fried cakes that are the best answer to a zucchini surplus. Serve with a dollop of sour cream or yogurt dip.

Ingredients

🌱 From Your Homestead

  • zucchini (2 large)
  • eggs (2)
  • fresh chives or dill

🛒 From the Store

  • flour
  • salt
  • oil for frying
  • sour cream for serving

How to Make It

  1. Gather your ingredients: zucchini (2 large), eggs (2), fresh chives or dill, flour, salt, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: zucchini (2 large), eggs (2), fresh chives or dill.
  3. Salt the shredded zucchini and let it sit 10 minutes, then squeeze out ALL the water. Wet batter = soggy fritters.
  4. Cook for approximately 20 min. Adjust to taste and serve 4 portions.
