Zucchini Fritters
Crispy pan-fried cakes that are the best answer to a zucchini surplus. Serve with a dollop of sour cream or yogurt dip.

- zucchini (2 large)
- eggs (2)
- fresh chives or dill

- flour
- salt
- oil for frying
- sour cream for serving
How to Make It
- Gather your ingredients: zucchini (2 large), eggs (2), fresh chives or dill, flour, salt, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: zucchini (2 large), eggs (2), fresh chives or dill.
- Salt the shredded zucchini and let it sit 10 minutes, then squeeze out ALL the water. Wet batter = soggy fritters.
- Cook for approximately 20 min. Adjust to taste and serve 4 portions.
- Plate, enjoy, and share with your household!
