Zucchini & Tomato Gratin
Thin-sliced zucchini and tomatoes layered with cheese and herbs, baked until the top is golden and the vegetables have melted together. The simplest impressive thing you can make with a summer garden.
Ingredients
🌱 From Your Homestead
- zucchini (3 medium)
- ripe tomatoes (3 large)
- fresh thyme and basil
- garlic
🛒 From the Store
- gruyère or parmesan
- olive oil
- breadcrumbs
- salt
- pepper
How to Make It
- Gather your ingredients: zucchini (3 medium), ripe tomatoes (3 large), fresh thyme and basil, garlic, gruyère or parmesan, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: zucchini (3 medium), ripe tomatoes (3 large), fresh thyme and basil.
- Salt the zucchini slices and let them drain on paper towels for 20 minutes before layering. This is the only way to avoid a watery, waterlogged gratin.
- Cook for approximately 55 min. Adjust to taste and serve 6 portions.
- Plate, enjoy, and share with your household!
