Summer Ratatouille

- zucchini (2)
- bell peppers (2)
- fresh herbs (thyme, basil)

- olive oil
- onion
- garlic
- salt
- pepper
How to Make It
- Gather your ingredients: tomatoes (4 large), zucchini (2), bell peppers (2), fresh herbs (thyme, basil), olive oil, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: tomatoes (4 large), zucchini (2), bell peppers (2).
- Better the next day. Make a big batch and eat it over pasta, eggs, polenta, or straight from the pot with bread.
- Cook for approximately 1 hr. Adjust to taste and serve 6 portions.
- Plate, enjoy, and share with your household!
