How to Make It
- Gather your ingredients: fresh herbs (rosemary, thyme, sage), garlic (1 whole head), eggs optional for side, chicken thighs (skin-on, bone-in), olive oil, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: fresh herbs (rosemary, thyme, sage), garlic (1 whole head), eggs optional for side.
- Sear the thighs skin-side down in an oven-safe pan over medium-high for 8 minutes before roasting — don't move them. Starting with a proper sear means crispy skin every single time.
