Braised Root Vegetables with Herb Dumplings
A thick, warming stew of root cellar vegetables braised in broth and topped with fluffy herb dumplings that steam on the surface. The definition of winter comfort food — a one-pot dinner that fills the house with the smell of something good happening in the kitchen.
Ingredients

- carrots (3, chunked)
- parsnips (2, chunked)
- turnips (2, chunked)
- fresh thyme and rosemary (2 tbsp chopped)
- garlic (4 cloves)
🛒 From the Store
- onion (1 large)
- vegetable broth (4 cups)
- tomato paste (2 tbsp)
- flour (1 cup, for dumplings)
- baking powder (1.5 tsp)
- butter (3 tbsp)
- milk (1/3 cup)
- salt
- pepper
- bay leaf
How to Make It
- Gather your ingredients: carrots (3, chunked), parsnips (2, chunked), turnips (2, chunked), fresh thyme and rosemary (2 tbsp chopped), garlic (4 cloves), and the rest.
- Prep your homestead ingredients — wash, chop, and measure: carrots (3, chunked), parsnips (2, chunked), turnips (2, chunked).
- Drop the dumpling batter in spoonfuls onto the simmering stew, then cover and don't lift the lid for 15 minutes. The dumplings steam on top of the liquid — lifting the lid releases the steam and the dumplings go flat and dense instead of fluffy.
- Cook for approximately 1 hr 20 min. Adjust to taste and serve 6 portions.
- Plate, enjoy, and share with your household!
