Herb-Stuffed Winter Squash
Halved winter squash roasted until tender, then filled with a savory mixture of grains, herbs, and cheese. Looks dramatic, requires no special skills, and uses the squash as its own serving vessel.

- fresh sage and thyme

- farro or wild rice
- onion
- dried cranberries
- walnuts
- olive oil
- feta
- salt
- pepper
How to Make It
- Gather your ingredients: winter squash (2 medium, any variety), fresh sage and thyme, farro or wild rice, onion, dried cranberries, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: winter squash (2 medium, any variety), fresh sage and thyme.
- Rub the cut sides with olive oil and place them cut-side down on a baking sheet to roast. They caramelize on the inside and steam themselves — far better than cut-side up.
- Cook for approximately 1 hr. Adjust to taste and serve 4 portions.
- Plate, enjoy, and share with your household!
