Roasting concentrates tomatoes into an intense, slightly sweet sauce that no simmered version can match. Make it in bulk when tomatoes are everywhere.

Ingredients

🌱 From Your Homestead

  • ripe tomatoes (3 lbs)
  • fresh herbs (basil, oregano)

🛒 From the Store

  • olive oil
  • garlic
  • onion
  • salt
  • pepper

How to Make It

  1. Gather your ingredients: ripe tomatoes (3 lbs), fresh herbs (basil, oregano), olive oil, garlic, onion, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: ripe tomatoes (3 lbs), fresh herbs (basil, oregano).
  3. Roast at 425°F for 35-40 min until tomatoes burst and char slightly at the edges. Those dark bits are flavor — don't toss them.
  4. Cook for approximately 1 hr. Adjust to taste and serve 8 portions.
  5. Plate, enjoy, and share with your household!
