A thick, garlicky mayo-adjacent sauce made from roasted garlic and fresh herbs. The roasting transforms sharp raw garlic into something mellow, nutty, and spreadable. Goes on everything.
Ingredients

- garlic (1 whole head)
- fresh herbs (thyme, chives)
- egg yolk (1, for made-from-scratch version)
🛒 From the Store
- olive oil
- lemon juice
- dijon mustard
- salt
- mayonnaise (for shortcut version)
How to Make It
- Gather your ingredients: garlic (1 whole head), fresh herbs (thyme, chives), egg yolk (1, for made-from-scratch version), olive oil, lemon juice, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: garlic (1 whole head), fresh herbs (thyme, chives), egg yolk (1, for made-from-scratch version).
- Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast at 375°F for 40 minutes until completely soft and golden. Squeeze the cloves out like toothpaste — they spread like butter.
- Cook for approximately 45 min. Adjust to taste and serve 8 portions.
- Plate, enjoy, and share with your household!
