Fresh Chimichurri
The Argentine herb sauce that transforms grilled meat, roasted vegetables, and eggs into something extraordinary. Fresh parsley, oregano, garlic, vinegar, and olive oil — no cooking required, just chopping. The first real use of spring herbs before the garden is fully producing.
Ingredients
🌱 From Your Homestead
- fresh flat-leaf parsley (1 packed cup)
- fresh oregano (2 tbsp)
- garlic (4 cloves)
🛒 From the Store
- red wine vinegar (3 tbsp)
- olive oil (1/2 cup)
- red pepper flakes (1/2 tsp)
- salt (1/2 tsp)
- black pepper
How to Make It
- Gather your ingredients: fresh flat-leaf parsley (1 packed cup), fresh oregano (2 tbsp), garlic (4 cloves), red wine vinegar (3 tbsp), olive oil (1/2 cup), and the rest.
- Prep your homestead ingredients — wash, chop, and measure: fresh flat-leaf parsley (1 packed cup), fresh oregano (2 tbsp), garlic (4 cloves).
- Chop by hand with a sharp knife — a food processor turns it into green paste. You want visible herb pieces in the oil, not a blended sauce. Make it 30 minutes before serving so the flavors have time to merge, but eat it the same day; by tomorrow the parsley will have dulled.
- Cook for approximately 10 min. Adjust to taste and serve 8 portions.
- Plate, enjoy, and share with your household!
