Fresh herbs steeped in white wine or apple cider vinegar for two weeks. The result goes into salad dressings, marinades, and braises all winter long — an entire herb harvest captured in a bottle.

Ingredients

  • garlic (optional)

🛒 From the Store

  • white wine vinegar or apple cider vinegar (2 cups)
  • glass jar or bottle with tight lid

How to Make It

  1. Gather your ingredients: fresh herbs (tarragon, rosemary, thyme, basil, or any combination), garlic (optional), white wine vinegar or apple cider vinegar (2 cups), glass jar or bottle with tight lid.
  2. Prep your homestead ingredients — wash, chop, and measure: fresh herbs (tarragon, rosemary, thyme, basil, or any combination), garlic (optional).
  3. Use fresh dry herbs — rinse them and let them fully air dry before adding to vinegar. Any water in the jar invites mold. The vinegar does the preservation work; your job is to keep moisture out.
  4. Cook for approximately 15 min + 2 weeks. Adjust to taste and serve 32 portions.
  5. Plate, enjoy, and share with your household!
