Strained fresh tomato purée — the simplest form of preservation that turns peak-season tomatoes into an uncooked sauce ready to use all winter. More versatile than canned crushed tomatoes.

Ingredients

  • canning jars
  • lemon juice (1 tbsp per jar for acidity)
  • canning pot or water bath canner
  • salt optional

How to Make It

  1. Gather your ingredients: ripe paste tomatoes (10 lbs — Roma or San Marzano type), canning jars, lemon juice (1 tbsp per jar for acidity), canning pot or water bath canner, salt optional.
  2. Prep your homestead ingredients — wash, chop, and measure: ripe paste tomatoes (10 lbs — Roma or San Marzano type).
  3. Press tomatoes through a food mill or fine mesh strainer — it removes skins and seeds in one step. Water bath can for 40 minutes for shelf stability, or freeze in quart containers for a year.
  4. Cook for approximately 1 hr + processing. Adjust to taste and serve 24 portions.
  5. Plate, enjoy, and share with your household!
