Dilly Beans
Whole green beans pickled with garlic, dill, and a kick of pepper — crunchier and more interesting than cucumber pickles, and the perfect vessel for whatever garden dill is going to seed. A classic homestead preserve that looks beautiful in the jar.
Ingredients
🌱 From Your Homestead
- fresh green beans (2 lbs, trimmed to fit jars)
- fresh dill (4 heads or large sprigs)
- garlic (8 cloves)
🛒 From the Store
- white vinegar (2 cups)
- water (2 cups)
- canning salt (3 tbsp)
- red pepper flakes (1/2 tsp per jar)
- pint canning jars
How to Make It
- Gather your ingredients: fresh green beans (2 lbs, trimmed to fit jars), fresh dill (4 heads or large sprigs), garlic (8 cloves), white vinegar (2 cups), water (2 cups), and the rest.
- Prep your homestead ingredients — wash, chop, and measure: fresh green beans (2 lbs, trimmed to fit jars), fresh dill (4 heads or large sprigs), garlic (8 cloves).
- Pack the beans standing upright, tight enough that they don't float when you pour in the brine. Loose beans shift around and some will end up above the brine line, which means soft patches.
- Cook for approximately 1 hr. Adjust to taste and serve 24 portions.
- Plate, enjoy, and share with your household!
