Ripe pears slow-cooked with warm spices until they collapse into a smooth, spreadable butter — the pear equivalent of apple butter, and arguably more elegant. The natural sweetness of pears means you need less added sugar than almost any other fruit butter. Water bath canned for a full year of shelf life.

Ingredients

  • sugar (3/4 cup)
  • lemon juice (2 tbsp)
  • vanilla extract (1 tsp)
  • cinnamon (1 tsp)
  • cardamom (1/4 tsp)
  • ginger (1/4 tsp)
  • salt (pinch)
  • canning jars and lids

How to Make It

  1. Gather your ingredients: ripe pears (5 lbs, any variety), raw honey (2 tbsp, optional), sugar (3/4 cup), lemon juice (2 tbsp), vanilla extract (1 tsp), and the rest.

  3. Simmer uncovered for the last hour — the butter should reduce by about a third and darken to a golden brown. It's done when a dollop on a plate doesn't weep liquid around the edges. Blend with an immersion blender for a silky texture or leave chunky for a rustic spread.
  4. Cook for approximately 3 hr. Adjust to taste and serve 32 portions.
  5. Plate, enjoy, and share with your household!
