A versatile infused oil using whatever soft herbs are coming in strongest. Drizzle on bread, pasta, soup, or roasted vegetables. It keeps two weeks and improves every day.

Ingredients

  • garlic (2 cloves optional)

  • good quality olive oil (1 cup)
  • flaky salt
  • lemon zest optional

How to Make It

  1. Gather your ingredients: fresh soft herbs (basil, parsley, chives, tarragon — 1 cup packed), garlic (2 cloves optional), good quality olive oil (1 cup), flaky salt, lemon zest optional.
  2. Prep your homestead ingredients — wash, chop, and measure: fresh soft herbs (basil, parsley, chives, tarragon — 1 cup packed), garlic (2 cloves optional).
  3. Blanch herbs in boiling water for 15 seconds then immediately transfer to ice water before blending with oil. This kills the enzymes that turn basil black and keeps the oil bright green for days.
  4. Cook for approximately 10 min + overnight. Adjust to taste and serve 16 portions.
  5. Plate, enjoy, and share with your household!
