Corn & Zucchini Succotash
A quick sauté of fresh corn, zucchini, and beans that captures everything good about late summer in one pan. Works as a side or a light main over polenta or toast.
Ingredients

- sweet corn (3 ears)
- zucchini (2 medium)
- fresh basil
- garlic
🛒 From the Store
- butter
- lima beans or edamame
- shallot or onion
- salt
- pepper
- smoked paprika
How to Make It
- Gather your ingredients: sweet corn (3 ears), zucchini (2 medium), fresh basil, garlic, butter, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: sweet corn (3 ears), zucchini (2 medium), fresh basil.
- Get your pan ripping hot before adding anything. Corn needs high heat to char slightly on the edges instead of steaming — that caramelization is what makes the dish.
- Cook for approximately 20 min. Adjust to taste and serve 4 portions.
