The Argentine herb sauce that goes on everything — grilled meat, roasted vegetables, eggs, bread, straight off a spoon. Parsley-forward, tangy, and ready in five minutes.

Ingredients

  • fresh oregano (2 tbsp)
  • garlic (4 cloves)

  • red wine vinegar
  • olive oil
  • red pepper flakes
  • salt
  • pepper

How to Make It

  1. Gather your ingredients: fresh flat-leaf parsley (1 packed cup), fresh oregano (2 tbsp), garlic (4 cloves), red wine vinegar, olive oil, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: fresh flat-leaf parsley (1 packed cup), fresh oregano (2 tbsp), garlic (4 cloves).
  3. Chop by hand, don't blend. A blender turns it into an emulsified paste — the rough chopped texture with visible herb pieces is what chimichurri is. It takes 5 minutes with a knife.
  4. Cook for approximately 10 min. Adjust to taste and serve 8 portions.
  5. Plate, enjoy, and share with your household!
