Butternut Squash Soup
Velvety, warming soup that makes a whole squash disappear into something elegant. Ginger and a touch of cream take it from good to great.

- vegetable broth
- onion
- garlic
- ginger
- heavy cream
- nutmeg
How to Make It
- Gather your ingredients: butternut squash (1 large), vegetable broth, onion, garlic, ginger, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: butternut squash (1 large).
- Roasting the squash first (400°F, 25 min) instead of just simmering it adds a caramelized depth you can't get any other way.
- Cook for approximately 45 min. Adjust to taste and serve 6 portions.
- Plate, enjoy, and share with your household!
