Roasted Tomato Bisque
A rich, smooth tomato soup built on roasted tomatoes that have been coaxed into deep, concentrated flavor. This is the tomato soup that changes what you think tomato soup can be.
Ingredients

- fresh basil
- garlic (6 cloves)

- vegetable broth
- heavy cream
- olive oil
- salt
- pepper
- crusty bread for serving
How to Make It
- Gather your ingredients: ripe tomatoes (3 lbs), fresh basil, garlic (6 cloves), onion, vegetable broth, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: ripe tomatoes (3 lbs), fresh basil, garlic (6 cloves).
- Roast the tomatoes cut-side down at 425°F until they collapse and char. Then flip and roast 10 more minutes. All that darkness goes right into the soup — don't skip it.
- Cook for approximately 55 min. Adjust to taste and serve 6 portions.
- Plate, enjoy, and share with your household!
