Warm Harvest Grain Salad
Farro or wheat berries tossed warm with roasted autumn vegetables, toasted seeds, and a bright apple cider dressing. Hearty enough to be a main, interesting enough to be worth the effort.

- fresh herbs (thyme, sage)
- honey (1 tsp for dressing)

- farro or wheat berries
- apple cider vinegar
- olive oil
- dried cranberries
- pepitas
- Dijon
- salt
How to Make It
- Gather your ingredients: winter squash (2 cups cubed), fresh herbs (thyme, sage), honey (1 tsp for dressing), farro or wheat berries, apple cider vinegar, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: winter squash (2 cups cubed), fresh herbs (thyme, sage), honey (1 tsp for dressing).
- Dress the grain while it is still warm from cooking — it absorbs dressing better hot than cold and you end up with a more cohesive salad instead of grains just sitting next to the other ingredients.
- Cook for approximately 45 min. Adjust to taste and serve 4 portions.
- Plate, enjoy, and share with your household!
