Roasted Sweet Potato & Kale Salad

Hearty kale massaged with olive oil, topped with sweet roasted sweet potato and pepitas, dressed with an apple cider tahini dressing. The salad for when you're hungry and want something that'll still feel like a salad. A full lunch.

Ingredients

  • sweet potatoes (2 medium)
  • fresh kale (1 large bunch)
  • raw honey (1 tsp, for dressing)

🛒 From the Store

  • pepitas (1/3 cup)
  • tahini (2 tbsp)
  • apple cider vinegar (2 tbsp)
  • olive oil
  • garlic (1 clove)
  • lemon
  • dried cranberries optional
  • salt
  • cumin (1/2 tsp)

How to Make It

  1. Gather your ingredients: sweet potatoes (2 medium), fresh kale (1 large bunch), raw honey (1 tsp, for dressing), pepitas (1/3 cup), tahini (2 tbsp), and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: sweet potatoes (2 medium), fresh kale (1 large bunch), raw honey (1 tsp, for dressing).
  3. Massage the kale with olive oil and salt for 2 minutes with your hands before adding anything else. The rough handling breaks down the tough cell structure, making it tender and removing the bitterness. Unmassaged kale in a salad is unpleasant; massaged kale is excellent.
  4. Cook for approximately 40 min. Adjust to taste and serve 4 portions.
  5. Plate, enjoy, and share with your household!
