Strawberry Fruit Leather
Puréed summer fruit spread thin on a baking sheet and dried in a low oven into a rollable, chewy sheet. A use for slightly overripe fruit that would otherwise go to waste. Kids and adults both reach for it. Keeps three months at room temperature.
Ingredients

- ripe strawberries or mixed berries (3 cups)
- raw honey (1-2 tbsp to taste)

- lemon juice (1 tbsp)
- parchment paper
- rimmed baking sheet
How to Make It
- Gather your ingredients: ripe strawberries or mixed berries (3 cups), raw honey (1-2 tbsp to taste), lemon juice (1 tbsp), parchment paper, rimmed baking sheet.
- Prep your homestead ingredients — wash, chop, and measure: ripe strawberries or mixed berries (3 cups), raw honey (1-2 tbsp to taste).
- Spread the purée no more than 1/4 inch thick — thicker spots will stay sticky in the middle while thinner spots over-dry. Use an offset spatula and take the time to make it even; it makes the difference between one consistent texture and uneven patches.
- Cook for approximately 6 hr 20 min. Adjust to taste and serve 8 portions.
- Plate, enjoy, and share with your household!
