The easiest preservation project with the most immediate payoff. Herbs mixed into flaky salt and dried. Shelf-stable for a year and makes great gifts.

Ingredients

🌱 From Your Homestead

  • fresh herbs (rosemary, thyme, sage, lavender — any one or mix)

🛒 From the Store

  • coarse sea salt or flaky salt (1 cup)

How to Make It

  1. Gather your ingredients: fresh herbs (rosemary, thyme, sage, lavender — any one or mix), coarse sea salt or flaky salt (1 cup).
  2. Prep your homestead ingredients — wash, chop, and measure: fresh herbs (rosemary, thyme, sage, lavender — any one or mix).
  3. Lay flat on a baking sheet and leave at room temperature for a week — no oven needed. The salt draws the moisture out of the herbs as it absorbs their flavor.
  4. Cook for approximately 5 min + 1 week drying. Adjust to taste and serve 24 portions.
  5. Plate, enjoy, and share with your household!
