The no-canning-required pickle. Ready in 24 hours, keeps for months in the fridge, and works with cucumbers, peppers, green beans, carrots — almost any firm vegetable.

Ingredients

🌱 From Your Homestead

  • cucumbers, peppers, or green beans
  • fresh dill
  • garlic

🛒 From the Store

  • white vinegar
  • water
  • salt
  • sugar
  • mustard seed
  • peppercorns

How to Make It

  1. Gather your ingredients: cucumbers, peppers, or green beans, fresh dill, garlic, white vinegar, water, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: cucumbers, peppers, or green beans, fresh dill, garlic.
  3. Pack vegetables as tightly as possible into the jar before pouring brine — they shrink slightly and you'll want a full jar.
  4. Cook for approximately 15 min + overnight. Adjust to taste and serve 12 portions.
  5. Plate, enjoy, and share with your household!
