Peppery arugula with sweet-tart sliced strawberries, toasted almonds, and a balsamic-honey dressing. A salad where the contrast of flavors is the entire point — nothing in it is competing, everything is complementing.

Ingredients

🌱 From Your Homestead

  • fresh strawberries (1.5 cups, sliced)
  • arugula or peppery greens (4 cups)
  • fresh basil leaves (small handful)
  • raw honey (1 tsp, for dressing)

🛒 From the Store

  • sliced almonds (1/3 cup, toasted)
  • goat cheese or ricotta (2 oz)
  • balsamic vinegar (2 tbsp)
  • olive oil (3 tbsp)
  • Dijon mustard (1/2 tsp)
  • salt
  • pepper

How to Make It

  1. Gather your ingredients: fresh strawberries (1.5 cups, sliced), arugula or peppery greens (4 cups), fresh basil leaves (small handful), raw honey (1 tsp, for dressing), sliced almonds (1/3 cup, toasted), and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: fresh strawberries (1.5 cups, sliced), arugula or peppery greens (4 cups), fresh basil leaves (small handful).
  3. Hull and slice strawberries 30 minutes before serving and sprinkle with a little sugar and balsamic — this process called macerating draws out juices that become part of the dressing. No extra dressing needed for the berries.
  4. Cook for approximately 15 min. Adjust to taste and serve 4 portions.
  5. Plate, enjoy, and share with your household!
