A soft, slightly sweet sandwich bread made with oats and your own honey. The oats add structure and chew; the honey adds a gentle sweetness that makes toast almost unnecessary to butter. A winter baking project that fills the house with warmth and produces something the family will eat in a day.

Ingredients

🌱 From Your Homestead

  • raw honey (3 tbsp)
  • eggs (1, for egg wash)

🛒 From the Store

  • bread flour (3 cups)
  • rolled oats (1 cup, plus more for topping)
  • active dry yeast (1 packet)
  • warm water (1 cup)
  • butter (2 tbsp, melted)
  • salt (1.5 tsp)
  • whole milk (1/4 cup)

How to Make It

  1. Gather your ingredients: raw honey (3 tbsp), eggs (1, for egg wash), bread flour (3 cups), rolled oats (1 cup, plus more for topping), active dry yeast (1 packet), and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: raw honey (3 tbsp), eggs (1, for egg wash).
  3. Soak the oats in the warm water and honey for 10 minutes before mixing in the flour — the oats soften and absorb liquid, which means they integrate into the dough instead of creating dry pockets. Add the yeast to this oat mixture once it's cooled to lukewarm.
  4. Cook for approximately 3 hr (including rise). Adjust to taste and serve 12 portions.
  5. Plate, enjoy, and share with your household!
