Thin-sliced cucumbers and onions in a sweet-tangy brine — the crunchy, slightly sweet pickle that converts people who say they don't like pickles. Crisp in the jar for six months, on sandwiches and charcuterie boards all winter.

Ingredients

🌱 From Your Homestead

  • pickling cucumbers (4 lbs)
  • onion (1 large)

🛒 From the Store

  • apple cider vinegar (3 cups)
  • sugar (2 cups)
  • mustard seed (1 tbsp)
  • celery seed (1 tsp)
  • turmeric (1/2 tsp)
  • canning jars
  • salt

How to Make It

  1. Gather your ingredients: pickling cucumbers (4 lbs), onion (1 large), apple cider vinegar (3 cups), sugar (2 cups), mustard seed (1 tbsp), and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: pickling cucumbers (4 lbs), onion (1 large).
  3. Toss cucumbers with salt and let them sit in a colander for 1 hour, then rinse. This draws out excess water so they stay crisp in the jar instead of turning soft over time.
  4. Cook for approximately 2 hr. Adjust to taste and serve 32 portions.
  5. Plate, enjoy, and share with your household!
