Garden Minestrone
The soup that was invented to use up everything at once. No fixed recipe — it changes every week based on what the garden is producing. The formula is the same; the ingredients are whatever you have.
Ingredients

- zucchini (1)
- green beans (1 cup)
- fresh tomatoes (2)
- fresh herbs (basil, parsley)
- garlic
🛒 From the Store
- pasta or white beans
- vegetable broth
- onion
- olive oil
- parmesan rind
- canned tomatoes
- salt
How to Make It
- Gather your ingredients: zucchini (1), green beans (1 cup), fresh tomatoes (2), fresh herbs (basil, parsley), garlic, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: zucchini (1), green beans (1 cup), fresh tomatoes (2).
- Add a parmesan rind to the pot while it simmers. This is the restaurant trick — it releases glutamates that make the whole soup taste meatier and more complex.
- Cook for approximately 50 min. Adjust to taste and serve 8 portions.
- Plate, enjoy, and share with your household!
