The soup that was invented to use up everything at once. No fixed recipe — it changes every week based on what the garden is producing. The formula is the same; the ingredients are whatever you have.

Ingredients

🌱 From Your Homestead

  • zucchini (1)
  • green beans (1 cup)
  • fresh tomatoes (2)
  • fresh herbs (basil, parsley)
  • garlic

🛒 From the Store

  • pasta or white beans
  • vegetable broth
  • onion
  • olive oil
  • parmesan rind
  • canned tomatoes
  • salt

How to Make It

  1. Gather your ingredients: zucchini (1), green beans (1 cup), fresh tomatoes (2), fresh herbs (basil, parsley), garlic, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: zucchini (1), green beans (1 cup), fresh tomatoes (2).
  3. Add a parmesan rind to the pot while it simmers. This is the restaurant trick — it releases glutamates that make the whole soup taste meatier and more complex.
  4. Cook for approximately 50 min. Adjust to taste and serve 8 portions.
  5. Plate, enjoy, and share with your household!
