White Bean & Kale Stew
A thick, hearty stew of white beans, kale, and broth fortified with parmesan rind and a splash of vinegar. Winter homestead cooking at its most direct — filling, restorative, and done in 40 minutes.

- garlic (6 cloves)
- fresh rosemary (2 sprigs)

- white beans (2 cans or 3 cups cooked)
- vegetable or chicken broth (4 cups)
- canned tomatoes (1 can, crushed)
- onion
- parmesan rind
- red pepper flakes
- olive oil
- apple cider vinegar (1 tbsp)
- salt
How to Make It
- Gather your ingredients: fresh kale or winter greens (1 large bunch), garlic (6 cloves), fresh rosemary (2 sprigs), white beans (2 cans or 3 cups cooked), vegetable or chicken broth (4 cups), and the rest.
- Prep your homestead ingredients — wash, chop, and measure: fresh kale or winter greens (1 large bunch), garlic (6 cloves), fresh rosemary (2 sprigs).
- Mash about a quarter of the beans against the side of the pot before adding broth — it thickens the stew without any flour or starch. The mashed beans create that creamy texture restaurants achieve with heavy cream.
- Cook for approximately 40 min. Adjust to taste and serve 6 portions.
