Sliced pears arranged in a caramel-lined skillet, topped with a warmly spiced cake batter, and flipped after baking to reveal a glistening, golden fruit top. A winter dessert that transforms stored pears into something genuinely elegant. The caramel from the butter and brown sugar does all the visual work.

Ingredients

🌱 From Your Homestead

  • pears (3, ripe but firm, peeled and sliced)
  • eggs (2)
  • raw honey (1 tbsp, optional)

🛒 From the Store

  • butter (6 tbsp, divided)
  • brown sugar (1/2 cup, for caramel)
  • flour (1.5 cups)
  • granulated sugar (3/4 cup)
  • baking powder (1.5 tsp)
  • cinnamon (1 tsp)
  • ginger (1/2 tsp)
  • cardamom (1/4 tsp)
  • buttermilk (3/4 cup)
  • vanilla
  • salt

How to Make It

  1. Gather your ingredients: pears (3, ripe but firm, peeled and sliced), eggs (2), raw honey (1 tbsp, optional), butter (6 tbsp, divided), brown sugar (1/2 cup, for caramel), and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: pears (3, ripe but firm, peeled and sliced), eggs (2), raw honey (1 tbsp, optional).
  3. Arrange the pear slices in a tight spiral — they shrink during baking, so what looks overcrowded raw will look perfectly spaced when done. Use a cast iron skillet: make the caramel directly in the skillet, arrange the pears, pour the batter on top, and bake. Let it cool 5 minutes before flipping — too hot and the caramel runs; too cool and it sticks.
  4. Cook for approximately 1 hr. Adjust to taste and serve 8 portions.
  5. Plate, enjoy, and share with your household!
