Spiced Pear Upside-Down Cake

How to Make It

- Arrange the pear slices in a tight spiral — they shrink during baking, so what looks overcrowded raw will look perfectly spaced when done. Use a cast iron skillet: make the caramel directly in the skillet, arrange the pears, pour the batter on top, and bake. Let it cool 5 minutes before flipping — too hot and the caramel runs; too cool and it sticks.
