A freeform tart with no pan, no crimping, no pressure — just pastry dough folded up around sliced apples and brushed with honey butter. The imperfect edges are the whole aesthetic. It bakes up better than anything you'd spend two hours on.

Ingredients

🌱 From Your Homestead

  • apples (4 medium, thinly sliced)
  • raw honey (2 tbsp)

🛒 From the Store

  • all-purpose flour (1.5 cups)
  • cold butter (10 tbsp, divided)
  • ice water
  • sugar (3 tbsp)
  • cinnamon (1 tsp)
  • lemon juice
  • salt
  • egg (1, for wash)

How to Make It

  1. Gather your ingredients: apples (4 medium, thinly sliced), raw honey (2 tbsp), all-purpose flour (1.5 cups), cold butter (10 tbsp, divided), ice water, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: apples (4 medium, thinly sliced), raw honey (2 tbsp).
  3. Leave chunks of cold butter visible in the dough — pea-sized pieces are fine. The chunks create steam pockets that push up layers as the pastry bakes. Smooth dough bakes flat; chunky butter dough bakes flaky.
  4. Cook for approximately 1 hr 15 min. Adjust to taste and serve 8 portions.
  5. Plate, enjoy, and share with your household!
