Honey-Poached Pears
Whole pears poached in a honey and spice syrup until translucent and yielding, then served with the reduced syrup and a spoonful of crème fraîche. The most elegant thing you can make with a ripe pear, and the easiest.
Ingredients

- ripe but firm pears (4, any variety)
- raw honey (1/3 cup)
🛒 From the Store
- white wine or water (2 cups)
- vanilla bean or 1 tsp extract
- cinnamon stick
- star anise (1)
- lemon peel
- crème fraîche or vanilla ice cream for serving
How to Make It
- Gather your ingredients: ripe but firm pears (4, any variety), raw honey (1/3 cup), white wine or water (2 cups), vanilla bean or 1 tsp extract, cinnamon stick, and the rest.
- Prep your homestead ingredients — wash, chop, and measure: ripe but firm pears (4, any variety), raw honey (1/3 cup).
- Poach at a bare simmer — the liquid should barely move. A rolling boil breaks the pears apart. Low and slow gives you a pear that holds its shape and is infused all the way through with the poaching liquid.
- Cook for approximately 40 min. Adjust to taste and serve 4 portions.
- Plate, enjoy, and share with your household!
