Peak-season strawberries cooked down with sugar and lemon into a bright, glossy jam that tastes like the fruit actually smelled. Water bath canned for shelf stability or refrigerated for up to three months. The standard against which all store-bought jam fails.

Ingredients

  • lemon (1, juice and zest)

  • granulated sugar (3 cups)
  • pectin (1 packet, optional)
  • canning jars with lids
  • canning pot

How to Make It

  1. Gather your ingredients: fresh strawberries (4 lbs), lemon (1, juice and zest), granulated sugar (3 cups), pectin (1 packet, optional), canning jars with lids, and the rest.
  2. Prep your homestead ingredients — wash, chop, and measure: fresh strawberries (4 lbs), lemon (1, juice and zest).
  3. Test the set by putting a small spoonful on a frozen plate — if it wrinkles when you push it with your finger after 30 seconds, it's ready. Don't skip this test or you'll end up with strawberry syrup.
  4. Cook for approximately 1 hr 30 min. Adjust to taste and serve 48 portions.
  5. Plate, enjoy, and share with your household!
